Non-Vegetarian Rice Dishes

Biryani
  • 1 Kg boneless chicken or lamb, cut in 1 inch strips or cubes
  • 2 cups rice ( Basmati Rice preferred)
  • 5 cloves garlic
  •   small piece of ginger
  •   1/2 tsp red chilli powder
  • 1 green chilli
  • 2 medium onions ( chopped)
  • 3 large potatoes ( peeled and diced )
  • 1/2 tsp turmeric powder  
  • 1.2 tbsp garam masala                            
  • 3 tbsp butter
  • 3 pods of cardamoms
  • 3-4 cloves
  • 1-2 inch stick of cinnamon or to taste
  • salt to taste
Make a paste from garlic, green chillies and ginger. Fry the onions in the butter until golden brown. Add the garlic-ginger-chili paste and fry for a few more minutes. Add the meat and mix well. Saute everything together for 8-15 minutes or until meat is half cooked. Add chopped tomatoes,  turmeric and salt and saute for 2-3 minutes.Add cinnamon, cardamoms, cloves and garam masala.  Add a little bit water and cook until the meat is almost cooked. Now add the rice and the rest of the water and cook covered, on a very low flame for 15-20 minutes or until the rice is cooked. Garnished with the green chopped cilantro.
