Biryani
- 1 Kg boneless chicken or lamb, cut in 1 inch strips or cubes
- 2 cups rice ( Basmati Rice preferred)
- 5 cloves garlic
- small piece of ginger
- 1/2 tsp red chilli powder
- 1 green chilli
- 2 medium onions ( chopped)
- 3 large potatoes ( peeled and diced )
- 1/2 tsp turmeric powder
- 1.2 tbsp garam masala
- 3 tbsp butter
- 3 pods of cardamoms
- 3-4 cloves
- 1-2 inch stick of cinnamon or to taste
- salt to taste
Make a paste from garlic, green chillies and ginger. Fry the onions in the butter until golden brown. Add the garlic-ginger-chili paste and fry for a few more minutes. Add the meat and mix well. Saute everything together for 8-15 minutes or until meat is half cooked. Add chopped tomatoes, turmeric and salt and saute for 2-3 minutes.Add cinnamon, cardamoms, cloves and garam masala. Add a little bit water and cook until the meat is almost cooked. Now add the rice and the rest of the water and cook covered, on a very low flame for 15-20 minutes or until the rice is cooked. Garnished with the green chopped cilantro.
