Vegetable Salad   
  • lettuce ( half head )
  • 2 tomatoes
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 cucumber
  • 1 small onion thinly sliced or 3-4 green onions
  • 2-3 tbsp olive oil
  • baby carrots 8-10ohk
  • lemon juice 2-3 tbsp
  • cauliflower 5-6 small florets
Cut lettuce, baby carrots, tomatoes, cucumber, cauliflower and green onions into cubes. Mix it all together. Add salt, black pepper, lemon juice and little bit of olive oil and mix it.



Green Beans Salad
                                                   

  • 1 pound fresh green beans ( washed and trimmed )
  •  8-10 grape tomatoes cut into halves
  • salt / black pepper ( to taste )
  • juice of 1/2 lemon
  • 1/4 cucumber cut into thin sticks
  • 1/2 small onion thinly sliced

Steam washed and trimmed green beans for 4-5 minutes.In a bowl add beans, tomatoes halves, cucumber and onion. Mix it all together. Add salt, black pepper, lemon juice and little bit of olive oil and mix it.


Crunchy Cucumber Salad With Crushed Peanuts      
  • 2 cucumbers, chopped into small cubes (about 3cups)
  • 1 medium green mild chili, minced
  • 1/2 cup unsalted peanuts (preferably raw, but toasted)  
  • 2-3 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1 tbsp vegetable oil
         
    Put chopped cucumbers in a bowl along with the chili. Grind the peanuts into powder ( not very fine powder ). Add the peanuts into the bowl.  Add lemon juice, salt and sugar and mix everything well.
    Heat the oil in a small skillet over high heat.  Add the mustard seeds,cover the skillet with a lid. As soon as the seeds stop sputtering, pour the oil over the salad.Mix everything very well.
