Pakodas
  • 2 cups besan
  •  vegetable oil ( for frying )
  • 1/4 tsp salt
  • 1/4 tsp garam masala
  • water
  • 1/4 tsp red chillies powder
  • chopped green coriander
  • 1 potato
  • bread ( your choice )
Mix besan and water in a bowl to make batter. Add salt, red chillies powder, garam masala powder and chopped green coriander. Mix everything. Cut bread into triangles and potatoes into rounds ( can use cauliflower also ) , soak it in the batter and deep fry in the oil until golden brown color.  Serve with your choice of chutney or tomato ketchup.

  Samosa                                   

  • 1 medium onion, chopped                                      
  •  vegetable oil ( for frying )
  • 1/2 tsp salt 
  • 1 tsp coriander/cumin powder
  • 1/4 tsp garam masala
  • 1 tbsp green chopped coriander
  • 1/4 tsp red chillies powder
  • 1 tbsp amchur (mango) powder or 1 tbsp lemon juice
  • chopped green coriander
  • 3 medium size potatoes ( boiled,peeled, and cut into small pieces)
  • 1/4 cup boiled or frozen peas
For making dough:
  • 2-3 tbsp vegetable oils
  • 1/2 tsp salt 
  • 2 cups white flour                                                                                                                           
In a skillet heat veg oil,   add 1 pinch of hing and cumin seeds. When seeds start popping, add onions. Fry till onions are golden, add amchur powder, cumin/coriander powder, salt, red pepper and garam masala. Saute  for a few minutes, then add potatoes, green peas and frresh chopped coriander.   Mix everything well and saute for a few more minutes. Remove from heat and keep in the bowl. To make dough, in a bowl mix white flour, salt, veg oil and  kneed tight dough by adding around 1/4 cup water.Let the dough  rest for 15-20 mins. To make samosas, take small pieces of dough and roll them into round circles around 6" -8 " in diameter. Cut each circle in tho half. Fold each half-circle int to thirds to give it pie wedge shape. Seal the edges by pressing them. It will look like a cone. Fill the cone by potato mixture around 2/3 .Seal the cone . Deep fry samosas until brown in color. Serve with your tamarind and green coriander chutney.

Papdi Chat  
  • 1/2 tsp salt                                      
  • 25 gms ghee
  • 1/2 tsp salt 
  • 1/2 tsp cumin seeds
  • 2tsp green peas
  • 1/2 tsp chat masala
  • 1/2 tsp garam masala
  • 1/2 tsp cumin powder
  •  1/2 tsp red chili powder
  • 1/4 tsp coriander powder
  • 1/2 ginger chutney
  • 25 gm sweet curd
  • 100 gm refined flour
  • 100 gm potatoes ( boiled )
  • A pinch of Asafoetida
  • A pinch of Black Salt
  • chopped green coriander
  • 3 medium size potatoes ( boiled,peeled, and cut into small pieces)
  • 1/4 cup boiled or frozen peas


Method:

1. Mix the flour with ghee and salt and sufficient water to make tight dough.
2. To make the papdis, roll the flour into a thin sheet, cut into small roundels of 1 inch diameter and deep-fry till light brown.
3. Mix boiled and chopped potatoes and green peas. Put in all the powdered masala. Make a base of this mixture on a plate.
4. Put the roundels of deep fried papdi on top of the potato green pea mixture.
5. Top with some ginger chutney and yogurt and sprinkle cumin powder.
6. Check for seasoning and serve cold.

Indian Style Okra
  • 3 tablespoons butter
  • 1 medium onion, chopped
  • 1 pound sliced fresh okra
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground black pepper
  •  salt to taste
Melt butter in a large skillet over medium heat. Add the onions in it and stir it until it turns lightly brown and tender. Stir the okra and add the rest of the ingredients (cumin, ginger, coriander, pepper, and salt). Cook and stir it for about 20 minute and cover the skillet with a lid. Stir is occasionally until okra is tender.  


Onion Bhaji
  • 4 Medium Onions (600g)
  • 6 tsp (45g) Onion Bhaji Paste 
  • 1 Egg 
  • 2 Fresh Finger Green Chillis (optional)     
  • 150g Chickpea Flour (Gram Flour)    
  • Fresh Corainder
Cut the onions into long thin slices. Put them in a bow and add the egg in it. Add the onion bhaji paste and mix it thoroughly covering all the onions. Add the chopped green chilies and sprinkle in the fresh coriander. Put the required amount of gram flour and mix it thoroughly. Once all the contents are mixed, shape it into round patties and fry them in hot oil. Fry the patties until they turn golden brown. Check whether the patties are cooked by pressing the centre, and if moist fry it for further few minutes. Serve it with fresh salad and mint sauce.

Tips: Dampen your hands with water occasionally to help make neat flat patties.
